Batch notes: This week was certainly one for the books. We have been operating on a level of adzuki bean scarcity, only making enough tempeh for the fresh market. We have continued our weekly shipments to the Big Island so those of you on the Kona side are able to cash in on some Maui goodness at the local Island Naturals.

This week we’ll be getting our palette of beans in and so those of you who want to help us hike the 2,000 lb of beans up our stairs your invited!

We’re releasing a real life product prototype of our Zuki jerky at the market tomorrow. We’ll also have BBQ pulled Zuki “pork,” our famous Zuki peaceful poke, and we’ll be serving Zuki burgers with almond butter and kimchi….. 🙊
You’ll just have to try it.

Solidifying a new incubation room setup this week, so that we can increase our production level and share more Maui Tempeh love!

Oh what movement we’ve got happening in and around Maui Tempeh right now! Our plates have certainly been full, and we’ve been playing around with some recent changes in process and our potential to expand.

This particular batch we upped the amount of adzuki beans we use on a given production day. It was a particularly long day here at the kitchen, but all is well when your making fresh Zuki, right?

This was our first day of using the portioner for (almost) EVERY SINGLE TEMPEH BRIK. That is amazing. Why stand in a circle with all your friends talking story and bagging adzuki beans when you could sit in front of a portioner all by yourself with a foot pedal? Some trade-off.

We have really been excited about the new products we’ve been able to share with the community these last few Saturdays, from the famed Zuki Poke, different styles of Zuki Burger, a pulled-pork style Zuki BBQ, other pre-made meals in the form of curries and gumbos and teriyakis and sautés, to yes…. wait for it….. Zuki Jerky. If you haven’t already heard, please welcome the newest member into our Maui Tempeh family, and that is: ZUKI .

Add zuki to your diet.

We are continuing our shipment across the islands and have begun consistently providing fresh zuki tempeh to the Big Island, just today started shipping Oahu, and soon to our extended family out on Kauai.

A revolutionary production day for the Maui Tempeh crew. It was our first day testing ‘preshelled’ adzuki beans, a process that not only shaves off the red adzuki shells but also HOURS of labor. Yeah! We cooked, dried, and inoculated per usual, but there was a noticeable difference in these beans. They were glowing!

We are solidifying our new system of frozen zuki packs of which we are distributing 24 units of each product: zuki blocks and zuki burgers. Add zuki to your diet!

An accompanying price increase has hit the shelves in our retail accounts this past week, a whole dollar more per block! Find us at the Farmers Market for the best deals: $6/block or $15/for 3. This weekend we will have the DOUBLE BOOTH again which will be feauturing a full spread of Maui Tempeh premade meals: Tempeh Poke, Curry, Gumbo, and Chile! We will also be grilling up zuki burgers for on the spot enjoyment. Yeah!

This week we didn’t have enough beans cracked for a full large-scale production, and so instead we soaked what we had, and produced 180 some odd pounds of inoculated adzuki beans. Our grind plates have been acting up and grinding some of the beans into a fine flour. Woof. It was just Mikel and Robert carrying out production on Wednesday, and they sure did move. Being able to maintain a good flow together in this intimate work-space is everything. We are still figuring out how to appropriately delegate all of the many tasks of this complex operation, but we are closer than ever before. Thanks to the extra help of master baggers Mel and Tets.

Our growing family has recently brought in a mighty fine brother, Tets, who is helping to hold down some aspects of the nitty gritty cleaning operation at the kitchen. In his free time, he has been cooking tempeh into these delicious snack ‘steak’ strips and just yesterday he and Charles helped to prepare some of the greatest tasting Katsu we’ve ever had. Yes, you heard that right… Adzuki bean, cruelty free, Tempeh Katsu! So delicious.

We are picking up some new accounts on the Big Island and are very excited to be able to distribute throughout Hawaii. More mouths eating more Maui Tempeh is definitely a good thing.

The tempeh this week came out REALLY good. it took some diligent monitoring this Thursday, and we succeeded in producing a rock-star batch of that good stuff.

Sunday was production day for us and by the end of the day we ended up inoculating 210 lb of adzuki beans. Oh yeah! The dream team was in motion on the floor meanwhile Jaime was catering a birthday party down in Kihei and Mikel n Charles we’re bringIng food to an event over in Kihei. We were everywhere! Jaime had made tempeh skewers of different sorts on the spot: teriyaki and peanut sauté. Mikel n Charles had prepared what is quickly becoming a fan favorite: tempeh poke. Yeah!

Lots in motion here at the kitchen. We are working hard to streamline and fully release our Zuki burgers throughout the islands, and we’re very close! Photographing a few product models, drawing up info sheets, and solidifying labeling and packaging.

The tempeh stayed VERY hot all day. We battled keeping the room cool and……… the tempeh looks great! Solid and firm, smells good, and consistent. We will be going out on deliveries this afternoon, come and get the fresh stuff at Hawaiian Moons, Down 2 Earth, Mana, Rodeo General Store, AND Honokowai Farmers Market.

A big shout out to Jaws Country Store for their incredible Maui Tempeh burgers they are serving up…. did I say incredible? INCREDIBLE.

We produced a smaller batch than normal this week, producing less than half of what we normally do. The tempeh still got pretty hot, and stayed hot throughout its growing process. That has been seeming to work quite well with our final tempeh product, and we’re stoked.
It feels a little like the calm before the storm. We’ve got a big weekend ahead of us with not one but TWO big-ass tents at our weekly farmers market. We are expanding our food operation and will be revealing the looks of it tomorrow. Come check us out!

We’ve been producing more tempeh burger patties lately, so that’s cool. 😉

We had a HUGE batch this week, ending production day with just over 300 pounds of inoculated adzuki beans. Fortunately for us it is safe to say that we are now finally operating with a full crew! Very exciting times at the Tempire.

It was an incredibly large wrapping day on Friday, as the tempeh came hot off the shelf [real good I might add], and a real flowy assembly line to push the product through.

Jamie and Mikel are off to Oahu for the taste awards after the market on Saturday. We are cooking gumbo ON SITE at the market, come on up and get the goods!

This batch came out so good! We had such an incredible amount of help from the community this week bagging and wrapping, with new tempeh masters introduced to the family. Big shout out to Master baggers Charles and Kiawe. Another big shout out to master wrappers Nicole, and Charles.

Come to the market and grab some hot teriyaki tempeh made fresh on spot! We also will be serving Gumbo and Panang curry. Yay!

Here at Tempeh central we are certainly feeling a great many things. A few big things happened this last week. From our absence in half the week’s tempeh production to a grandiose Earth Day celebration this last Sunday, it was one of those “different kind” of weeks for sure. Thanks everyone who came out to celebrate Earth Day and support Maui Tempeh! It is always a hoot to serve delicious food product to the community and share in their enjoyment! We had served a Tempeh bagel burger, Tempeh Gumbo, and Tempeh Fried Rice….. yum!

While Mikel and Jaime were doing their Earth Day thing, the boys were back at the kitchen making a good amount of fresh adzuki bean tempeh…. over 400 blocks to be exact! As of today, the tempeh came out REAL good, super white n firm… a great display of mycelium growth that we ALL can be proud of. Hop-rah!

When the beans don’t get soaked at the right time the night before production, it tends to delay the process a bit. This is what happened Saturday night, or should I say didn’t happen Saturday night. Sleepy boy somehow didn’t make it to the kitchen to soak the beans on time and instead, at 4AM, frantically made his way to the kitchen to ‘get em soakin.’

The rest of the crew showed up and instead of being in disarray, took it upon themselves to TASK OUT. A very productive morning ensued with all sorts of deep cleaning and bean cracking. By 11AM we were ready to make some tempeh and, had a pretty easy time doing it too. The beans took extra long to dry, but we were finished by early evening.

The tempeh didn’t finish heating up until about 1:30 on Tuesday, 4 and a half hours later then we would normally take it out. The temp stayed low all afternoon and overnight which created some FINE tempeh, although because of the conditions, some is underdeveloped. We will be doing deliveries this afternoon and will be supplying a new account, Pukalani Superette! Yahoo! A demo of some hot delicious prepared tempeh will be served there this afternoon at 4:00. Come and see what we bring!
